Will cleaning wash the sand out from between my patio slabs?
Yes, on sand-jointed paving that is unavoidable, because the dirt sits in the top of the joint and lifting it lifts the sand. That is normal and expected, not a fault. What matters is that the joints get refilled afterwards, and we will agree that with you at quote stage so it is settled before we start.
Will pressure washing damage the mortar between my slabs?
Sound mortar is fine. Failing mortar is not, and washing will find it. Slurry pointing and tired or crumbling mortar can lift under a washer, so we check the pointing first and tell you what we see. If it is already going, cleaning reveals the problem rather than causing it, and repointing is the proper fix.
How do I stop weeds coming back between my paving?
Keep the joints full. Weeds do not push up through a properly laid patio, they seed on top and root in the debris sitting in open joints, so an empty or hollow joint is effectively a seed tray. Cleaning removes the seed bed and refilling the joints removes the place for the next lot to settle. More pressure does nothing for weeds.
Can you re-sand the joints after cleaning my patio?
Which yours needs is agreed before anything starts. Joint filling is part of the conversation at quote stage, not an assumption either way, since it depends on what your patio is jointed with. Sand joints need refilling after cleaning, resin-jointed patios need a compatible compound, and mortar joints need pointing rather than filling.
